Nitrile is synthetic, latex free and the most puncture and chemical resistant, which is why it dominates medical and industrial use. Latex gives the best fit and tactile feel but can trigger allergic reactions. Vinyl is the least expensive and suits short, low-risk jobs such as food prep.
One MIL is a thousandth of an inch, usually measured at the fingertip. Broadly: 3 to 4 MIL for food handling and light cleaning, 5 to 6 MIL for exam and clinical work, and 8 MIL and above for mechanical, automotive and chemical handling.
Exam gloves are regulated as medical devices and held to tighter pinhole and tensile standards, so they are the right choice for patient contact. General-purpose gloves are not intended for medical use and cost less for janitorial, automotive and food-service tasks.

Measure across your palm just below the knuckles: roughly 3 in is small, 3.5 in medium, 4 in large, and 4.5 in and over is XL. With nitrile it is safe to size down slightly, because the material stretches to the hand.
